Foodie Friday: Grilled Chicken Caesar Salad.

TGIF, friends and happy August!! I feel as if the summer is slipping right through my fingers, so we love to be out and about making the most of this time of year! As a result, I prioritize meals that are incredibly quick and easy, leaving room for more fun as a family! I mean, come on, who likes to be stuck in the kitchen when there is so much summer fun to be had?! I first had this salad at one of our favorite restaurants in Lancaster (The Belvedere Inn), and while I always had theirs with steak tips, I love the addition of chicken instead! By grilling the lettuce, you get this crunchy, smoky, warm combination which is soooo phenomenal and a little twist on the ordinary Caesar Salad. Plus, any meal I can make entirely outdoors is also a big huge WIN in my book. :)

Grilled Caesar Salad

Grilled Chicken Caesar Salad. 

(Serves 2)

Ingredients: 

I large bunch/head of Romaine lettuce, sliced in half lengthwise. (Leave core attached, this will hold it together on the grill)

2 large chicken breasts, sliced into 3-4 tenders each

Good Caesar Salad Dressing (I like Barefoot Contessa’s, but don’t use the raw egg yolk!)

2 tsp. dried oregano

1 tsp. salt

1 tsp. black pepper

Dousing of good olive oil

Dousing of good balsamic vinegar

2 tsp. dijon mustard

2 cloves garlic, minced

Directions:

Turn grill burners on to medium-high and let heat up.

Place chicken tenders in bowl and add oregano, salt, pepper, garlic, mustard, olive oil and vinegar (Add these liquid ingredients until a nice amount of marinade forms, enough to coat chicken and then some.). Mix until ingredients seem to meld together nicely. Refrigerate to marinate at least half an hour.

Cut lettuce lengthwise into two open-faced slabs. Drizzle large, open face with olive oil and a dash of salt and pepper.

When grill is hot, add chicken and watch until thoroughly cooked (165 internal temp.). Remove to waiting plate and turn grill up to high. Wait a few minutes for temperature to rise and then place the lettuce slabs, flat/open side down onto the grill. Do not move them! You want those lovely char marks. :) Leave on grill for 2-3 minutes, depending on how hot your grill is, just long enough for the char marks to appear but the rest of the lettuce is still crisp.

Place lettuce on plate while still warm, flat side up, and dress with chicken, dressing, and good quality parmesan cheese! (Croutons are always a good idea as well. :)) Enjoy!!!
