Foodie Friday: Apple Cake.
You guys. I know I always say that the recipe I am posting is “amazing” and “out of this world”. Today, however, your lives might just be changed forever. :) A sweet, talented, and Super-Mom family friend of ours (Hi, Briana! :)) shared this recipe a few years ago and it has become an absolute, unfailing favorite. Quick to make, and with an out-of-this-world buttery crust and carmel drizzle, I PROMISE you will fall in love. (Plus, it is a perfect way to use up some of those apples we have all been picking!)

Apple Cake by Briana
Ingredients:
3 Eggs
2 cups of sugar
1 1/2 cup of oil (I use half olive oil)
2 tsp. vanilla extract
3 cups of flour
1 tsp. salt
1 tsp. baking soda
3 cups, chopped and peeled apples
1 cup coarsely chopped pecans (optional)
Topping:
1/2 cup of butter
1/4 cup milk
1 cup packed brown sugar
Pinch of salt
Directions:
Preheat oven to 350 degrees (f). Beat eggs until foamy, and gradually add sugar. Mix in oil and vanilla extract. In a separate bowl, combine dry ingredients. Add to wet ingredients and combine until just mixed. Fold in apples/pecans. Pour batter into buttered and floured tube/bundt pan, and bake for 1 hour or until cake tester comes out clean. Cook in pan on wire rack for 10 minutes before turning upside down onto a plate.
For the topping: Boil ingredients in saucepan for 3 minutes, stirring constantly. Pour over warm cake.
